The other day I came home late from work and wanted to make something quick as it was close to 7pm and my son was restless. I looked in my fridge and had tons of vegetables so I decided to make this special meal I've never made before. Am I ever glad I tried this! My son and I both loved it!
Ingredients: •1 can of turtle black beans •1 cup of lentils (any will do, green or yellow) •1 cup of orzo •savoury -to taste about 1 spoon or so •1/2 spoon of cumin •big bowl of chopped broccoli •1 large carrot chopped •1 zucchini chopped •1 red pepper chopped •2 spoons of honey garlic Diana sauce •1 clove of fresh garlic chopped •olive oil Instructions: 1. In a large pot, add the washed lentils and orzo with water, cumin and some butter -boil for about 20 mins until the lentils are soft and the orzo is cooked 2. In a large skillet, add some olive oil and turn the heat on medium to high 3. Add the garlic, peppers, zucchini, broccoli, carrots and savoury 4. Add some water and let it simmer for a good 10-15 mins until all the veggies are soft, adding little bits of water as the veggies soak up all the water so they don't burn 5. Drain the orzo and lentils when they are finished and leave to the side 6. When the veggies are almost done, add some more savoury and pour the honey garlic diana sauce all over (not too much, I only added maybe two spoons). Stir well and let it simmer a minute or so, adding a bit of water 7. When the veggies are done turn it off and leave to the side 8. Open the can of black beans and drain, wash them well 9. In a large plate, add the orzo and lentils then top with some black beans and a large portion of the veggies Enjoy!
