INGREDIENTS:
  • 2 cooked chicken breasts cut in pieces​
  • 2 celery stalks chopped
  • 2 carrots chopped
  • 1 yellow onion chopped
  • Spices: salt, pepper, turmeric, chicken boulion cube...you can even add ginger and garlic.
  • Lemon
  • 1 cup orzo
COOKING INSTRUCTIONS:
  1. In a deep pot, add some olive oil and the chopped onion. Let simmer for 2 mins.​
  2. Add the celery, carrot, salt, pepper, turmeric and chicken boulion and let simmer.
  3. Add some water and the chicken. I had left over chicken so it was already cooked. You can add fresh chicken but adjust the cooking time to ensure your chicken is cooked.
  4. Add some more spice - to taste.
  5. Add the cup of orzo and let it cook, stirring occasionaly. It will be cooked in 10-15 mins when the orzo is cooked.
  6. Enjoy it with some warm bread and add lemon to the bowl to enhance the flavour.

vegetarian: Beets and rice

I made up this meal with the ingredients I had and my instant pot.
-half red onion chopped
- spoon of turmeric
- savory (to taste, 1/2 spoon)
- salt and pepper to taste
- any other spice you want to add (paprika)
-avocado oil
- 3 cloves garlic chopped
- a handful of mushrooms chopped
- 3 large carrots chopped
- 1 large beet (I had 3 in a bunch but they were huge so I used only one) chopped thin
- 1 cup jasmine rice
- 1 cup water


  1. Saute the onion, garlic, spices, and mushrooms ( about 5 mins)
  2. Add the beets and saute another 5 to 10 mins adding water so it doesn't burn.
  3. Add the carrots.
  4. Add the rice and a cup and a bit of water, change the setting to manual (5 mins) or rice setting but make sure it's no longer than 5 mins.
  5. Close the lid and let it cook.
    Surprisingly, it turned out delicious 😋

Lemon chicken soup

You can make variations of this soup, you can add orzo, or noodles, or leave as is. This soup has become a staple in our home, it is so easy to make, absolutely delicious, not to mention the health benefits to your immune system! It is also a huge hit with the kids! You can make this in your instant pot or in a pot on the stove. 

INGREDIENTS:
  • 3-4 cloves of garlic
  • 2 yellow onions
  • 4-5 carrots
  • 2-3 chicken breasts
  • 2 handfulls of fresh dill
  • 5-8 lemons
  • 5 eggs
  • 1 cup Orzo (or noodles)
  • Salt, pepper, savoury to taste
  • 1 chicken stock cube

INSTRUCTIONS:
  1. At the bottom of your pot, add some olive oil and the chopped up garlic and onions. Simmer for about 5 minutes.
  2. Add the carrots (chopped up) and the spices- savoury, salt, pepper, and chicken bullion cube
  3. Add the chicken, water and the juice of 3 lemons. Cover and let it cook for about 30 mins (this is the time I used in my instant pot, you may have to adjust the time it takes to cook on the stove). 
  4. When the chicken is ready, take out the chicken and chop it up into small pieces, put it back in the pot. 
  5. In a separate bowl, beat the 5 eggs and slowly pour them into the pot as you are stirring the soup simultaneously.
  6. Add the rest of the lemon juice and more spice as needed, also add more fresh dill and some orzo or noodles. Let it cook another 5 minutes. 
  7. You can garnish with more lemon and dill as needed when the soup is in the serving bowls.
 Enjoy!

Fig pizzA

This has to be our most favourite pizza we’ve ever made! It’s first of all so simple to make and everyone loves the taste, even my son!
Ingredients:
  • Pizza dough
  • Olive oil
  • Parmigan cheese
  • Mozzarella
  • Figs
  • Fig jam
  • Prosciutto
  • Arugula

Instructions:
  1. Add some flour on the counter (or wherever you’re going to knead the dough)
  2. Roll out the dough and make it into pizza shape
  3. Add some olive oil all over it
  4. Add some fig jam
  5. Add some parmigan cheese
  6. Wash and cut the figs into slices and add them to the pizza
  7. Add some mozzarella
  8. Bake it until the dough is done (350 degrees)
  9. Take it out and add the prosciutto pieces all over
  10. Put it back in the oven for 2-5 mins
  11. Take it out and add arugula on top!

Enjoy!

Honey garlic shrimp

This was probably one of the greatest dishes I’ve made up! Not to mention it was extremely easy and it only too about 15 mins to make!

Ingredients:
  • One container of cooked shrimp (I had the frozen platter with about 30 shrimps)
  • 1/2 cup of honey
  • 1 clove garlic
  • 1 tsp olive oil



Cooking Instructions:
  1. In a deep pan, add the chopped up garlic and olive oil and let it simmer for a minute
  2. Wash the shrimp and add it to the pan, mixing with the garlic
  3. Add the honey and mix some more. You can also add a bit of water maybe 1/4 cup and let it simmer
  4. Cook it for about 10 minutes
  5. Enjoy it with a glass of white wine ;) or you can add it to other dishes like the one below ⬇️

Persian chicken

ingredients:


  • 6 skinless chicken thighs
  • 2 cups of Greek yogurt
  • Saffron spice (one package)
  • Salt, pepper, savoury to taste
  • 1/2 lemon 🍋
  • 1 carrot chopped in small squares
  • 1 small yellow onion chopped in small squares
  • Pasta or orzo to add to the plate


Cooking Instructions:


  1. In a large bowl, add the yogurt, saffron spice and lemon juice, mix well. Add the chicken to the mixture and let it marinate for a bit (it’s best to let it marinate for at least an hour in the fridge)
  2. In a deep frying pan (stainless steel kind), add a bit of olive oil and fry the onion and carrot until soft and golden
  3. Add salt, pepper, savoury
  4. Add the chicken with yogurt mixture and add some water to it. Cover it and let it simmer on medium for about 30 mins or so, turning over each piece of chicken periodically as it cooks
  5. Boil some pasta or orzo. Add it to a plate and then when the chicken is done you can add it to the orzo/pasta
  6. Enjoy with a glass of white wine, moscato is my preference!🍷

Veggie stuffed peppers

Ingredients:
  • 4 peppers (red, yellow, orange)
  • 1 can of black beans
  • 2 carrots
  • 1 red onion
  • 1 green zucchini
  • 1 broccoli
  • Spices - salt, pepper, savoury, oregano, dill, parsley
  • 1 garlic clove
  • Feta cheese
  • Barbecue diana sauce (small amount about 3 spoons)


Cooking Instructions:
  1. Wash and cut up all the veggies
  2. In a deep pan, add olive oil and the onion and garlic
  3. Add the carrots and cook
  4. Add spices
  5. Add the zucchini and broccoli and add some water, let it simmer
  6. Add the beans and diana sauce and some more water. Let it simmer some more
  7. When done, stuff the peppers and add feta cheese on top
  8. Add some water to the baking dish and cover, cook on 390-400 for 25 minutes or until pepper is soft

VEGETABLE SOUP

Imgredients:
  • 3 carrots 🥕 chopped in pieces
  • 1 red pepper
  • 1 orange pepper
  • 3 stalks celery
  • 1 yellow onion
  • 1 can of corn 🌽
  • 1 can of red beans or black beans
  • spices - salt, pepper, savoury, mint, cumin
  • 1 clove garlic chopped
  • 1 tomato 🍅

Cooking Instructions:
  1. Cut up all the veggies in squares or small pieces
  2. Add them to a boiling pot of water
  3. Add spices - salt, pepper, savoury, mint, cumin, garlic
  4. Let it simmer until veggies are soft and your house smells delicious 😋 (20-30 mins)
  5. You can purée the soup or leave it chunky!
  6. Enjoy 😊

Lemon chicken with pOTatoes

I actually got this recipe from following Jennifer Garners page on Instagram. I tweaked it a bit and made it my own. It turned out to be absolutely delicious!

Ingredients:
  • One whole chicken split in half with skin
  • 5-6 large yellow potatoes
  • One small red onion cut in slices
  • Spices - salt, pepper, paprika, savoury, mint, oregano
  • Two lemons cut in slices


Cooking Instructions:
  1. Peel and cut the potatoes, add some spices and olive oil to them in a large dish, add the onions and mix
  2. In a large baking pan or ceramic dish, add the cut and peeled potatoes and onions, add a bit of olive oil to grease the pan
  3. Get the chicken and split it kind of so it’s flat. With your fingers, peep the skin and add the lemons underneath the skin
  4. Add the spices all over the chicken and add some butter on top (this will make the skin crispy)
  5. Cover and bake it in the oven for about 35-40 minutes until the chicken is almost ready
  6. Halfway through the cooking, Uncover, remove the lemons (I left mine in until the end and it was way too lemony)
  7. Bake until the top is crispy and the chicken is fully cooked
  8. Let it cool and enjoy it with some salad 🥗

Crockpot veggie and lentil soup

This month, I discovered an amazing recipe that is easy to make, quick, and absolutely delicious. I made some changes to it and made it my own so hopefully you’ll love it just as much as the original! (Sweetphi.com)

Ingredients:
  • 2 large carrots
  • 1 yellow zucchini
  • 1 white zucchini
  • 1/2 sweet onion
  • 1 sweet red pepper
  • 2 yellow potatoes
  • 2 cups of red lentils
  • 1/2 bunch of kale
  • 2 celery sticks
  • 4-5 cups of vegetable stock
  • 2 cloves of garlic
  • Salt, mint, parsley, sage, oragano - as much as you like, depending on how big your crockpot is, mine was 7qt so quite big! I probably used two spoons of each but less salt maybe half of that! I also added some extra water because my vegetable stock was not enough!

Cooking Instructions:


  1. Wash and cut all the vegetables
  2. Add everything in the crockpot
  3. Add all the spices and stir
  4. Cook on high for 5 hours
  5. Enjoy 😉
