Today was a surprisingly cold day and then it started to SNOW! That’s right! Snow in May! Mid May at that! I had just the right idea when I decided to make my mom’s delicious green bean soup. It was quick, easy, and very comforting in this cold weather.
Ingredients:
Instructions: In a deep pot, add one spoon of olive oil, the chopped up carrot, onion, parsley, salt, pepper, paprika and savoury mix. Let it simmer for a min or two. Add the beans and mix, let it simmer for another minute. Add water and let it boil. As its cooking taste it to see if it needs more salt, savoury mix, or any other spice you want to add. I usually have to add a bit more of the salt and savoury mix. Cover the pot halfway and let it simmer for a good 15-20 minutes, stirring occasionally. When finished, serve hot with a spoon of plain greek yogurt! **You could also add 1/3 cup of ketchup while its boiling to add more of a sweet flavour! Enjoy!
