Since I am constantly hungry, I decided to make a comforting yet healthy casserole. I found a few recipes online but then ended up making up my own. Thankfully, it turned out amazing! Ingredients: ***Its best if you choose organic ingredients, I just used whatever was in my cupboard!
Instructions:
4. In a deep greased baking dish, add tortilla, layer of yogurt and tomato mix, chicken 5. Cover with another tortilla, then a layer of bean/onion/corn mix, cheese, tortilla 6. Continue the above layers until you reach the top 7. At the top layer, sprinkle with remaining cheese and add a bit of Italian seasoned bread crumbs 8. Cover with lid and bake at 350 degrees for 25 minutes 9. Remove the lid and bake an additional 15 minutes until the cheese browns a bit 10. Wait 5-10 minutes before serving- Cut in squares and serve with a side of yogurt or sour creamEnjoy!
